This is Yee Sang or the Prosperity Toss.
It is a Lunar New Year dish in Malaysia, Singapore & Southeast Asian countries, traditionally a colorful & symbolic dish made from a variety of ingredients.
Each ingredient has its prosperous meanings. Common ingredients include raw fish, carrots, daikon, cucumber, pickled ginger, pomelo, peanuts, sesame seeds, pillow crackers, five-spice powder, pepper, oil & plum sauce. However, many chefs and restaurants have chosen to adapt this dish to make it more exciting, with versions including snow pear, abalone, jackfruit or various meats.
Each ingredient carries symbolic significance such as:
"Abundance throughout the year" is represented by fish (Yu)
"May life always be sweet" is represented by plum sauce = sweetness in life.
"All goes smoothly" is represented by oil = smoothness.
"Floor full of gold" is represented by crackers = gold ingots.
And so on...
Everyone, then toss the ingredients into the air with auspicious wishes.
It's a tradition that fosters hope & well-wishes for everyone.
