A

nswering to hails of “Walker” and “Ranger”, my boyfriend, Jeremy Garcia is a born and raised Placencia boy who is a testament to how hard work really does pay off. As a Captain for the Moorings Belize, Jeremy can typically be seen aboard a 48-foot catamaran sailing all through the Belizean waters he’s known since he was a boy. Whether he’s heading south to Tom Owens or to an Atoll outside the reef, it’s doubtful there’s a Caye you could point to of which he doesn’t know the name.

Poised at the helm, eyes alert and smile basted on, it's obvious to any onlooker that his kind of synergy with the wind and the sea cannot be taught. It's in his blood. From the moment

Meet Tomas Gongara, aka DJ Dzl; June Flag Designer Knows Marketing, Sales and Parties By JOLIE POLLARD Breeze Editor

June’s Lobsterfest-themed flag was the creation of the multi-talented Tomas Gongora, founder of TG Marketing, a company offering a wide spectrum of services covering everything from concept to design to implementation. He wasn’t only a great candidate as a flag contributor for being an admitted foodie and a big fan of lobster festivals across the country, but Gongora’s stunning visual works can be seen in recently commissioned signage, logos and other marketing materials for several local businesses including Rainbow Pieces, Serenity Massage Studio, Barefoot Rentals and Services, Heaven’s Gate Beach Bungalows, Cake Chics and EM J’s Jewelry. Even though the current Belize City-based artist has recently begun to build a solid reputation on the Placencia Peninsula, he has been working professionally as a graphic designer in Belize for 15 years. Coming from a family of designers, Gongora says the path seemed inevitable. “My aunt saw me doodling

(By the way, as development increases on the Peninsula, these trees will become endangered. Keep in mind it serves some good use here. So big man, before you start thinking about your chi-ching and start clearing out those trees along with the mangroves, know that it helps to bring that yummy pricey lobster on your table.) Some of his marketing services provides clients with logos, print designs (flyers/ads), websites, signs, event planning, web marketing and automated e-mail marketing/newsletters. He also facilitates the production of printed materials and screen printed or embroidered shirts and uniforms. Gongora says his marketing career has also helped him develop impressive sales skills. One of the highlights of his career was generating over US$1 million in sales for a residential subdivision in San Pedro called Grand Belize Estates in just less than two years. “The fundamentals and values of sales that I learned during that time have since been

applied across all aspects of the businesses I do,” he said. Gongora remains involved in the real estate business providing marketing services for RE/MAX Southwind, which has boasted the top-selling RE/MAX agents in the Caribbean and Central America. Many in Belize also know this graphic designer as someone in the party scene. In the night clubs and on stage, he goes by the alias, DJ Dzl. “Placencia is one of my favourite places to DJ, as the people there are so open to all kinds of music that always makes a good time!” Furthermore, DJ Dzl says Placencia is his place to retreat from the commercialism and fast-paced

With the advent of the 2015 hurricane season in mid-June, one is reminded what Shakespeare said about ill winds bringing no good. “Thinking outside the box” refers to an approach to thinking that is a little different, less conventional, yes, even more creative. It usually applies to a person who accepts uncertainties, adjusts to situations, and makes them work to his or her advantage. While a perfectly grilled lobster tail dressed with just a little butter and garlic is a a must-do experience for any meat-eating visitor lucky to be in Placencia during the lobster season, knowing how the lobster is caught will increase one’s appreciation for this shell fish even more. Lobster hunting is a proud part of Placencia’s history. Many fishermen will brag about the incredible depths they can dive to hook lobsters living under corals. Jeremy Garcia, a young fisherman and sailor, featured in this issue’s “Oh Captain, My Captain” by Shaylene Todd can dive down to 80 feet with just the strength of his healthy lungs. Many others can free dive down to still, an impressive 60 feet, says 81-year-old retired fisherman Villamar “Villa” Godfrey, who free dived to those depths for 50 years. There is no industrial fishing vessel heading out to catch lobsters. After all these years, the typical mode of transport for fisherfolks is a small motor boat or the more traditional, shallow wooden dory. If you encounter a small boat in the sea while heading on one of your tours to a nearby island, it could mean that a fisherman is just below free diving for shellfish, which he will then deposit in the dory or a bag attached to the vessel before he goes back down again. A less challenging and popular method for lobster

Lobsters are free to roam in and out, but after becoming too comfortable, they become prey to the expert fisherman or woman. For all the hard work involved with lobster hunting, fisherfolks are rewarded BZ$14 per pound of the prized lobster tail from the local fishing cooperative, who then resells to restaurants and home cooks for BZ$20 a pound. It is for this reason that after preparations in the kitchen, a lobster meal in Placencia typically starts around BZ$35-40 in a restaurant. At the Placencia Lobsterfest, some food booths will be offering lobster meals at a great bargain with prices starting under

BZ$20. (Check out the Pickled Parrot steamed lobster special!) The lobster fishing industry also provides an alternative income for a tour guide with a commercial fishing license who might have difficulty finding opportunities for snorkeling, scuba diving or fly fishing trips during the summer months. Mr. Villa was sure to point out, however, that populations have declined significantly over the years. In his younger days, lobsters were so abundant and cheap that sellers would throw in extra for free. Stuffed Lobster (a la Chabil) Creole pub style lobster Recipe courtesy of Chef Carlos at Chabil Mar Resort Ingredients 4 (1 1/4-pound) Caribbean spiny lobster tail Fresh herbs: parsley 3 tablespoons fresh parmesan cheese 2 1/2 tablespoons butter (melted) 2 tablespoons fresh lime or lemon juice 2 tablespoons Worcestershire sauce 2 cups crumbled buttery crackers 2 lime or lemon wedges Directions Preheat Broiler. Remove the meat from the cooked lobster tail and claws; chop meat. Set lobster tail shells aside. Combine the lobster, crackers and the next five ingredients (Crackers through Worcestershire sauce) in large bowl. Divide the lobster mixture evenly among tail shells. Broil the stuffed lobster tails for 8 minutes or until golden brown. Serve with lime or lemon wedges. ▪

Jeremy will free dive to the bottom - he can go down to eighty feet - and search for those tell tale antennae hiding in coral caves. He’ll make a hard stab and after a sandy battle he’ll pull the lobster off the stick and put it in a mesh bag that follows him in your delighted hands. Back on board, he cuts off the head and splits the tail, sprinkles a little salt and pepper, and rubs some paprika on the flesh “for color.” His lobster is always of the melt-in-your-mouth variety as he barely cooks it on the grill for a full five minutes. Lionfish are Reef Stalkers Continued from page 11 The lionfish possess many characteristics that made them particularly successful invaders in their new habitat, including rapid growth and maturation, high reproductive rates, eighteen (18) defensive venomous spines and no proven natural predators. These invasive species are a serious threat to ecosystem health and global biodiversity (Albins & Hixon 2008; Whitfield et al. 2006) since they are competing with native organisms for limited resources, disrupting food webs and natural ecological processes, and driving native species out of their natural niches (Morris et al. 2009; Morris & Whitfield 2009). There are many complex and delicate marine ecosystems; like the coral reef ecosystem, which is already stressed by overfishing, coral bleaching, and obstructive algae growth in this region, without the addition of an invasive predatory fish (Morris, 2009). The lionfish prefer to consume smaller fish, like juveniles of many different reef fish species. This is a major problem; it prevents them from growing to sexual maturity and exacerbates declines in fish recruitment. Also, it affects the marine food web (especially with its high consumption rates) since it is important for reef fishes to reach adulthood in order to feed at higher trophic levels (Albins & Hixon 2011). In 2011, Albins and Hixon (2011) predicted a worstcase scenario of which reeffish biomass is converted to lionfish biomass and only the species that lionfish do not consume survive. This may lead to a collapse of the Mesoamerican Reef system

due to the destabilization of several food webs and of interdependent species relationships. As long as the insatiable lionfish continues to consume small herbivorous reef fish, the health of the reef remains threatened (Albins and Hixon, 2011). While the situation may indeed seem dire, it is not insurmountable. In fact the best predator to combat the lionfish…are humans. before she left, and she never came back ... I hear her voice vividly in my head. It was unique, her sound and the timber of her voice.
